Masala Coconut Baigan

Ingredients

Small Baigain- 4-5
Onion paste- 2tbsp
Roughly paste chilly-1/2 tbsp or as per ur taste
garlic and garlic paste- 1 1/2 tbsp
Chopped tomato-1
Shredded coconut- 4tbsp
coriander powder-1tsp
Cumin powder-1tsp
Garam masala- 1/2 tsp
Haldi- 1/2 tsp
oil- 3tbsp
salt

Method:
1.Wash baigan properly. Cut the baigan stalk and make 4 slits in baigan longitudinally leaving one end intact so that masala will easily enter.
2.Fry baigan in 3tbsp
oil. Take out when brown colours comes.
3.In the same oil add onion paste.when it slightly golden then add gindergarlic paste and mix until raw smell goes.
4.Then add chopped tomato, chilly paste and dry masalas(coriander,cumin,garam masala,haldi)
5.Lastly add shredded coconut and baigan with little water and mix well.
6.Serve hot with roti or rice
