ENDURI PITHA RECIPE OF ODISHA FOR PRATHAMASTAMI

Namaskar,
Best wishes to all the odias for the prathamastami. Prathamastami is an unique festival of Odisha. In this occasion Enduri pitha is made in all the odia kitchens.
RECIPE OF ENDURI PITHA

Ingredients:

3 Cups of rice
1 cup biri dali( urad dal)
Salt to taste
Haladi patra( turmeric leaves)
For stuffing
Fresh coconut grated 1 cup
Guda(jagarry) 1 cup
cardamum powder 1tsp
Method:
Soak rice and skinless blackgram for about 4 hours.
Wash &grind it into a thick batter.
Leave the batter for fermenting for about 8 hours. Add salt and mix well.
Now to prepare the stuffing, place a frying pan on medium flame.
Put the scrubbed coconut and jaggery or sugar. Stir and fry till it becomes a little dry.
Add powdered cardamom . Mix well and keep aside.
To prepare pitha take one whole green turmeric leaf .
Put a little batter on the leaf and flatten the same. Then put the required quantity of stuffing on the batter and fold the turmeric leaf lenghwise in such a way that the stuffing gets sandwitched in between two layers of batter.
You can tie a thread around the folded leaf to keep it secured. Now steam it in the idli stand.
You can steam it in the traditional way.
Take a wide mothed pot & fill it upto half with water. Then tie a muslin cloth tightly around its mouth. Carefully place the tied leaf containing stuffed batter on the cloth.
Cover it with a suitable lid.
Steam it till done and fork comes out clean.

The delicate aroma of turmric leaf is the special feature of the pitha.

Hi Gauri,
I want to add some points in your recipe of Enduri pitha.1-If you use dried powdered rice in place of grinded wet rice, you can make a proper thick batter for the pitha. 2-For the stuffing, you can use the mixture of grated coconut, cheese, cardamum & black peper powder, jaggery/sugar.
3-If you can't get fresh turmeric leaf, you may use the dried leaves also. Soak the dried leaves in water for 6-7 hours, then straight them & cut them into required size by using the scissors only.
